Buttery Sweet Potato Casserole
INGREDIENTS:
  • 2 cans (15-3/4 ounces each) sweet potatoes, drained and mashed
  • 1/2 cup sugar
  • 1 egg
  • 1/4 cup butter, melted
  • 1/2 teaspoon ground cinnamon
  • Dash salt
TOPPING:
  • 1 cup coarsely crushed butter-flavored crackers (about 25 crackers)
  • 1/2 cup packed brown sugar
  • 1/4 cup butter, melted
DIRECTIONS:
In a large bowl, combine the first six ingredients. Transfer to a greased 8-in. square baking dish. Combine the topping ingredients; sprinkle over sweet potato mixture. Bake, uncovered, at 350° for 20-25 minutes or until a thermometer reads 160°. Yield: 6-8 servings.

Manicotti Filling
  • 1 lb ricotta cheese
  • 6 oz mozzarella
  • 1/2 cup grated parmesan cheese
  • 1 to 2 eggs
  • salt, pepper and parsley to taste
Mix well. Stuff mixture into cooked manicotti noodles or shells. Follow directions on pasta box to bake.
