Suzanne’s Breakfast Burritos

Freezable!! I usually make up a double batch, wrap them individually and freeze all of them. The kids can grab one out of the freezer whenever they want one for breakfast and heat it in the microwave. They are very tasty and go so fast at our house!.
Ingredients:
  • 18 large eggs
  • ½ cup of milk
  • 1 tsp. of pepper
  • 1 tbsp vegetable oil
  • ¾ tsp cumin
  • 1 tsp chili powder
  • Garlic salt (to your taste)
  • 1 lb. breakfast sausage (I use turkey breakfast sausage) cooked (like hamburger) or 1 - 8 oz package of diced ham. You can add more or less, to your taste.
  • 1 – 10oz can of diced tomatoes and green chilies
  • 2 ½ cups of shredded cheese
Wisk together the eggs, milk and pepper. Put vegetable oil in frying pan and heat. Add eggs and scramble until done. Be sure not to overcook – you will want to have them a little moist. Remove from heat.

Mix in the seasonings, shredded cheese, tomatoes and green chilies and heat through.

Fill each tortilla with ½ cup of mixture. Fold ½ of tortilla over and then the sides. Wrap in cling wrap. You can adjust the entire recipe to your taste.

Beef With Broccoli
  • 1/4 cup Oyster Sauce
  • Garlic, Salt and Pepper to taste
  • Soy Sauce
  • Package of frozen broccoli
  • Package of stew beef
  • Water
  • Corn starch & water
  • Vegetable oil
Pre-heat wok or pan. Add some vegetable oil and saute the meat. Add the oyster sauce, garlic, salt, pepper and soy sauce (go around pan twice). Mix together. Add frozen broccoli and water - depending on how much gravy you want. Next add the cornstarch and water mixture. Bring to boil and wait to thicken.

Suzanne's Meatballs
  • 1 lb hamburger or ground turkey
  • 1/2 cup of italian breadcrumbs - can use a little more if using the turkey
  • 1/4 cup parmesan cheese
  • 1 tsp garlic salt
  • 1/2 tsp italian seasoning
  • 1 egg - can add another if too dry
  • 1/4 tsp pepper
Preheat oven to 400 °. Roll meat into small balls. place into a shallow baking pan in a single layer. Do not cover. Bake for 20 minutes or until no longer pink.

Suzanne's Tuna & Mushroom Pasta Dinner
  • 8 oz pasta, uncooked. I like to use radiatore pasta or egg noodles
  • 1 can cream of mushroom soup
  • 1/2 soup can of milk
  • 1 can mushroom pieces
  • 1 package of Starkist Herb and Garlic Tuna Creations
  • Garlic salt, salt, and pepper to taste
Cook pasta following directions on box. Drain. Add soup, tuna, mushrooms and seasonings. Heat through. We have a salad with it.

Suzanne's Taco Pork Roast
INGREDIENTS:
4 pounds pork shoulder roast
1 (7 ounce) can of diced green chilies, drained
1 (10 ounce) can of diced tomatoes and green chilies
1/4 cup chili powder
1 teaspoon dried oregano 1 teaspoon taco seasoning
2 teaspoons minced garlic
1 1/2 teaspoons salt, or to taste
DIRECTIONS:
1. Preheat the oven to 300 degrees F (150 degrees C).
2. Place the roast on top of a large piece of aluminum foil. In a small bowl, stir together the green chiles, chili powder, oregano, taco seasoning and garlic. Rub onto the roast. Wrap foil around the roast so that it is completely covered, using additional aluminum foil if necessary. Place on top of a roasting rack in a baking dish, or place a cookie sheet on an oven rack below to catch any leaks.
3. Roast the meat for 3 1/2 to 4 hours in the preheated oven, until falling apart. Remove from the oven, and shred into small pieces using two forks. Season with salt to taste.
